Simple Strawberrie Ice-cream

The simplest Strawberry ice-cream has only 4 ingredients. Strawberries and cream, sugar and fresh lemon juice.

1 pint Strawberries

1/3 cup sugar

2 cups light cream or half-n-half

Juice of 1/2 a lemon

Blend the cream, sugar and lemon juice.

Choose the ugliest of the strawberries to add to the cream.  I use about half of the pint.

 

Pour the blended strawberry cream into the frozen ice cream bucket. Put the blade into the bucket, cover with the lid and turn on the machine.

While the machine runs, hull and cut up the remaining strawberries. Set them into the freezer to chill.

Add the chopped strawberries when the ice cream is about finished. It will be full of air and have the consistency of soft-serve. Let the machine run about 5 more minutes.

The finished ice cream is best served right from the bucket. You can put it in the freezer but because of the simplicity of the ingredients it gets very hard and crunchy after time in the freezer. I found that putting the container into the microwave for about 15 to 20 seconds will bring it back to a silky softness.
